VALLEY OF PLENTY

Saskia Beer (left) is a local celebrity in South

Australia’s Barossa Valley. Her simple approach to

food and involvement with the local community of

growers and producers inspired the Novotel Barossa

Valley Resort to enlist her help in redesigning the

menu of its Cellar Kitchen restaurant. Using locally

sourced seasonal produce, Saskia has created an

ever-evolving menu of simple yet utterly delicious

dishes. A fine example of her culinary approach is

this starter of leeks poached in verjuice, which H&G

readers can recreate at home.

Tr i m 8 baby leeks, leaving white parts only.

Slice horizontally through first 4-5cm of tops of

leeks; clean under cold running water. Place leeks in

a frypan just large enough to hold them over very

low heat. Add 125ml verjuice and ½ cup water,

1 tbsp butter, 1 tsp sea salt, pepper, 2 bay leaves

and a few sprigs of thyme. Simmer 30mins or until

leeks are cooked through but still hold their shape.

Add 2 tbsp pitted olives for the last couple of

minutes of cooking. Check seasoning. Place leeks on

a serving platter, spoon 2 tbsp soft goats’ cheese

on top and garnish with thyme leaves and parsley.

Drizzle with extra-virgin olive oil. Serve with

crusty bread. (Serves 4.) >
