Fish Cabbage Rolls

MONDAY


4 x 100g boneless firm white fish fillets
2 tablespoons lemon juice
4 large wombok (Chinese cabbage) leaves
2 tablespoons teriyaki sauce
2 tablespoons light soy sauce
1 teaspoon sesame oil
4 green onions, thinly sliced
3cm piece fresh ginger, peeled, grated
1 fresh long red chilli, thinly sliced
3 cups cooked jasmine rice, to serve
¼ cup coriander leaves

1 Place fish in a shallow glass dish. Drizzle
with juice. Place cabbage leaves on a
microwave-safe plate. Cover cabbage
leaves with paper towel; Microwave on
High (100%) for 4 minutes or until tender.
Cool slightly.

2 Place each cabbage leaf on a clean work
surface. Top each with a piece of fish,
trimming to fit. Roll up from the stalk end,
folding sides in to form a neat parcel. Place

seam-side down in a shallow dish. Cover;
Microwave on High (100%) for 8 minutes
or until fish is cooked. Stand for 1 minute.

3 Whisk teriyaki and soy sauces, oil, onion,
ginger and chilli in a microwave-safe jug.
Microwave on High (100%) for 1 minute.
Cut cabbage rolls in half. Spoon rice onto
plates. Top each with a cabbage roll.
Drizzle with teriyaki sauce mixture.
Serve sprinkled with coriander leaves.
