Wholesome, hearty and delicious, this Mexican
classic will be a definite family winner
420g packet microwave white rice,
heated
400g can kidney beans, rinsed
400g can corn kernels, drained
2 cups hot cooked shredded
skinless chicken
4 green onions, finely chopped
2 tomatoes, chopped
8 gluten-free tortillas, heated, to serve
1 avocado, finely chopped
⅓ cup mild chilli sauce, to serve
1 Combine rice, beans, corn, chicken,
onion and tomato in a large bowl.
2 Spoon mixture down centre of each
tortilla. Top with avocado and chilli sauce.
Roll up to serve.
