Basic Pizza Dough
MAKES 1 large pizza base or 4 individual
pizza bases PREP 15 minutes + 1 hour
10 minutes to prove
2 cups plain flour
2 teaspoons (7g sachet) dried yeast
1 teaspoon caster sugar
1 teaspoon salt
1 cup lukewarm water
1 tablespoon light olive oil
1 Combine flour, yeast, sugar and salt in
a large heatproof bowl. Stand in a warm
draught-free place for 10 minutes
or until frothy.
2 Stir in the lukewarm water and oil.
Using a round-bladed knife in a cutting
motion, mix to form a soft dough. Turn
out onto a work surface lightly dusted
with flour; knead until smooth.
3 Place the dough in a lightly oiled
heatproof bowl. Stand, covered, in a warm,
draught-free area for 1 hour or until doubled
in size. Punch down dough; knead briefly.

+ ACTIVATE YEAST Make sure
water isn’t too hot; otherwise, it could
kill the yeast and the mixture won’t
become frothy.
+ PROVE IT For best results, half-fill
a kitchen sink with warm water and
stand the dough in a bowl in the water
to prove.
+ KNEAD IT Be sure to knead dough
until it’s smooth and elastic; this helps
the gluten in the flour give a good
pizza crust.
+ MAKE AHEAD Pizza dough can be
made up to a day ahead. Store in an
airtight container in the fridge.
