A HEALTHY ALTERNATIVE
TO FRENCH FRIES
2 tbsp. canola oil, plus more
for greasing wire racks
2 cups panko (Japanese-style
bread crumbs)
2 tsp. lemon pepper
1 oz. Parmesan cheese, grated
(about^1 ⁄ 4 cup)
1 ⁄ 2 cup whole buttermilk
1 large egg
1 ⁄ 2 cup all-purpose flour
3 ⁄ 4 lb. fresh green beans,
trimmed
Creamy Dijon mustard
1.Preheat oven to 450°F. Lightly
grease 2 wire racks with canola oil,
and set each over a baking sheet.
2.Stir together panko, canola oil
and lemon pepper in a shallow bowl
until blended, and stir in cheese.
Whisk together buttermilk and egg
in a second shallow bowl. Place
flour in a third shallow bowl.
3.Dredge each green bean in flour,
and then dip it into the egg
mixture, letting any excess drip off.
Coat with panko mixture, pressing
gently to adhere. Arrange breaded
green beans in a single layer on
prepared wire racks.
4.Bake in oven until golden brown,
about 15 minutes. Serve hot with
mustard for dipping.

To keep your
fingers from
getting sticky while
dredging, Gellar
suggests using one
hand for dipping
beans into the
egg mixture and
the other for
coating in the dry
ingredients.
