325g macaroni
150g reduced-fat cream
cheese, chopped
1½ cups skim milk
1 tablespoon Dijon mustard
¾ cup reduced-fat grated tasty
cheese, plus ¼ cup extra
200g shaved leg ham,
thinly sliced
2 tablespoons chopped chives,
plus 1 tablespoon extra
(optional)
½ cup dried packaged
breadcrumbs
20g reduced-fat margarine,
melted


1 Preheat an oven-grill on
high. Grease a 2-litre (8-cup)
ovenproof dish. Cook pasta
in a large saucepan of boiling
salted water for 8 minutes
or until tender. Drain.


2 Combine cream cheese,
milk and mustard in a large
saucepan over moderate heat;
cook and stir for 3 minutes or
until mixture comes to the boil.
Add pasta, cheese, ham and
chives; mix well. Spoon into
prepared dish; level surface.

3 Place the breadcrumbs,
extra cheese and margarine
in a bowl; mix well. Sprinkle
breadcrumb mixture evenly
over pasta. Place under grill;
cook for 5 minutes or until
golden brown. Serve sprinkled
with extra chives (if using).

450g packet fresh hokkien
noodles
2 teaspoons vegetable
or peanut oil
400g pork scotch fillet steak,
thinly sliced
1 red capsicum, thinly sliced
2 tablespoons hoisin sauce
1 tablespoon chilli sauce
2 tablespoons hot water
1 clove garlic, crushed
40g snow pea sprouts
1 tablespoon crushed peanuts

1 Place noodles in a large
heatproof bowl. Cover with
boiling water; stand for
3 minutes or until tender.
Stir with a fork to separate
strands. Drain.

2 Heat a wok or large frying pan
over high heat. Add oil; swirl to
coat surface. Stir-fry pork, in

2 batches, for 2 minutes or
until browned. Transfer to
a heatproof plate.

3 Add capsicum to wok; stir-fry
for 1 minute or until just tender.
Whisk hoisin sauce, chilli sauce
and the water in a jug. Add
sauce mixture and garlic to
wok; stir-fry for 1 minute or until
heated. Return pork to wok,
along with the noodles; stir-fry
for 2 minutes or until heated
and combined. Serve topped
with sprouts and peanuts.
