Thyme

A glorious addition to the Cotswolds with great food,

comfy beds, and a rather good cookery school

he sleepy village of Southrop,

once most famous for being the

location of the Kate Moss/Jamie

Hince wedding, should be rather

pleased with the expansion of Thyme –

because it’s a real gem in the local crown.

The low-level stone estate is arranged

around a large courtyard that's part

boutique hotel, part country house; with

a cookery school, organic gardens, and

150-acre farm thrown in. Thyme is the

brainchild of Caryn Hibbert, who bought

Southrop’s Manor House in 2002 with

her film director husband. When the

neighbouring farmhouse and barns came

up for sale, the couple took a deep breath

and snapped them up too. The latest

addition for 2017 is a glorious spa.

The whole place has laid-back charm

in spades, with lots of stylish touches. The

menus revel in local produce, most of it

home-grown, and there’s an extensive

list of wicked botanical cocktails to enjoy.

It's definitely our kind of country bolthole.
