Mum’s The Word Menu


PINA COLADA
SMOOTHIES
PREP TIME 10 MINUTES SERVES 8
(MAKES 8 CUPS)

1 cup (250ml) coconut water
⅓ cup (50g) desiccated coconut
900g fresh pineapple pieces
30 ice cubes (375g)
¼ cup (60ml) lime juice
toasted coconut and lime slices,
to serve

1 Blend the coconut water,
coconut and pineapple until
well combined. Add ice and
juice; blend until smooth.
2 Serve immediately topped
with toasted coconut and
lime slices.

TOP TIP
You will need about
1½ medium fresh
pineapples, peeled and
cored, for the amount
of pieces required.
