500g broccoli, fl orets shredded, stems
cut into matchsticks
150g white cabbage, fi nely shredded
2 apples, cored and cut into
matchsticks
2 spring onions, thinly sliced
cup buckinis (see tip)
cup roasted almonds, chopped
fl at-leaf parsley and mint leaves,
to serve
DRESSING
1 cup buttermilk
1 tbs apple cider vinegar
1 tbs white chia seeds
1 tbs honey
1 tsp dijon mustard
1 To make the dressing, combine all of
the ingredients in a jar, secure the lid and
shake well. Allow to sit for 30 minutes
(or longer) for the chia seeds to gel.
2 Place the broccoli, cabbage, apple,
spring onion and buckinis in a large
bowl. Pour over the dressing and toss
well. Season to taste and top with the
almonds, parsley and mint.
Tip Buckinis are soaked and dried
(‘activated’) buckwheat kernels,
which are full of protein and have
a great crunchy texture. They can
be found in health-food stores, or
good substitutes include toasted
sesame, sunfl ower or pumpkin seeds.
