Chickpea water is the new big
thing among vegans, with the
murky liquid found in canned
chickpeas doubling as the
perfect egg white substitute. The
liquid, called “aquafaba” can be
whisked to turn the
liquid into a fluffy meringue or
an indulgent chocolate mousse.

Health experts believe
you are removing the
healthiest part of a
vegetable when you
peel it. The majority of
vegetables’ nutrients are
actually within the skin
and contain antioxidants
that fight against free
radicals (groups of atoms
that cause damage to
the body, such as heart
disease, when produced
in excess). For example,
cucumber skin contains
most of its antioxidants
and vitamin K, while
potato skin contains
more iron, calcium,
potassium, vitamin B6
and vitamin C than the
rest of the potato.
JUST ADD PEPPER
Instead of reaching for the
salt the next time you want to
add a little flavour to your meal, opt for
its seasoning counterpart, pepper! Black
pepper contains piperine, which has
a thermic effect, meaning it can break
down fat cells and help you lose weight.
Pepper can enhance more than just
savoury dishes too. It can add a flavour
kick to sweet dishes and goes well with
fruit such as pear or strawberry.
