weekend cooking


1 tablespoon vegetable or olive oil
1 red onion, sliced
2 cups shredded red cabbage
1 apple, peeled, cored, grated
Pinch of ground cloves
1 tablespoon red wine vinegar
1 teaspoon caster sugar
2 kransky sausages, halved
lengthwise
Cooking oil spray
4 long bread rolls, split
50g baby spinach leaves
Wholegrain mustard, to serve

1 Heat oil in a large frying pan
over moderate heat. Cook and stir
onion for 3 minutes or until soft.
Add cabbage; cook and stir for
2 minutes or until wilted. Stir
through the apple, cloves, vinegar
and sugar. Season to taste. Cook for
a further 5 minutes or until soft.

2 Meanwhile, heat a char-grill pan
over high heat. Spray sausages with
oil; cook for 2 minutes each side or
until browned.

3 Fill rolls with the cabbage
mixture, spinach and kransky.
Serve with mustard.
