Pesto
Chicken Pizza
READY IN
25 MINUTES
4 x 12cm prepared pizza bases
+ 1 tablespoon olive oil + 2 thin
chicken sausages + 1/3 cup diced
canned tomatoes + 1/2 cup grated
pizza cheese, plus 1/2 cup extra
+ 8 cherry tomatoes, thinly sliced
+ 2 tablespoons basil pesto
+ 2 tablespoons water

Preheat oven to 240ºC/220ºC
fan-forced. Line 2 oven trays with
baking paper. Place pizza bases
on trays. Heat oil in a frying pan
over moderate heat; cook and
turn sausages for 5 minutes or
until cooked. Remove from pan;
thinly slice. Spread pizza bases
with canned tomatoes. Top with
pizza cheese, cherry tomatoes
and sausage. Whisk pesto and the
water in small bowl. Drizzle pesto
mixture over pizzas. Sprinkle with
extra cheese. Bake for 12 minutes
or until pizza is crisp. Serves 4
