Pastry chef Andy Bowdy is known for
his theatrical custom cakes filled with
mousse, jelly or custard, decorated
with Jackson Pollock-like drizzles and
topped with edible flowers. Now,
Bowdy is serving mini versions of his
singular desserts at Saga, his new cafe
in Sydney’s Enmore. Pictured above is
the Tony, with cocoa nibs, raspberry
mousse, cheesecake chunks, candied
hazelnut and lemon jam. It’s finished
with salted caramel and torched
meringue. That’s quite a mouthful – to
describe and devour – and explains
why the venue has been mobbed
since opening. The menu includes
tempting savoury items, but Bowdy’s
confections are the real scene-stealers.
