PORK SHOULDER
If you aren’t buying a whole shoulder,
you’ll most likely buy a cut that’s the
upper part of the pig’s shoulder. Cooking
this inexpensive cut low and slow delivers
a result that’s melt-in-the-mouth juicy,
hence why it’s often used in pulled pork.
Should you find yourself in the States,
shoulder is often called ‘Boston Butt’,
from a time when butchers in the city
packed cheaper cuts of pork like
shoulders into barrels, known as
butts, for storage and transport.
