& Almond Slice
MAKES 24 pieces PREP 20 minutes
+ cooling COOK 30 minutes
COST 65¢ a piece125g low-fat dairy-free margarine
2 tablespoons maple-flavoured syrup
2 eggs, at room temperature
2 overripe bananas, mashed
1 carrot, grated (about 1 cup)
½ cup traditional rolled oats
¼ cup almond meal (ground almonds)
¾ cup wholemeal gluten-free
self-raising flour
2 teaspoons ground cinnamon
½ teaspoon bicarbonate of soda
⅓ cup freshly squeezed orange juice
½ cup flaked almonds1 Preheat oven to 180ºC/160ºC fan-forced.
Lightly grease and line a 30cm x 20cm (base
measurement) slice pan with baking paper.2 Using an electric mixer, gently beat
margarine and maple-flavoured syrup
together in a bowl. Add eggs, one by one,
beating lightly after each addition. Stir in
banana, carrot, oats and almond meal.3 Sift flour, cinnamon and bicarbonate of
soda together. Fold into creamed mixture,
alternately with orange juice, until
combined. Pour into pan; level surface.
Sprinkle with almonds.4 Bake for 30 minutes or until a skewer
inserted at centre comes out clean.
Cool completely in pan (slice will firm).
Cut into squares to serve.MAKE AHEAD

slice up to 2 days
ahead. Store in an
airtight container
in a cool, dark placefamily baking
Raspberry
Crumble Friands
MAKES 9 PREP 20 minutes + cooling
COOK 20 minutes COST $1.95 each½ cup quinoa flakes
¼ cup firmly packed brown sugar
¼ cup gluten-free plain flour,
plus ⅔ cup extra, sifted
40g low-fat dairy-free margarine,
plus 150g extra, melted, cooled
1⅓ cups almond meal (ground almonds)
5 egg whites, lightly whisked
1 teaspoon finely grated orange zest
1¼ cups pure icing sugar, sifted
125g frozen raspberries1 Preheat oven to 180ºC/160ºC fan-forced.
Grease a 9-hole (½-cup) oval friand tray.
Combine quinoa, brown sugar and flour in
a bowl. Rub in margarine to make crumbs.2 Combine extra margarine, almond meal,
egg white and zest in a separate bowl. Fold
in icing sugar and extra flour until just
combined. Spoon into prepared holes. Push
a few raspberries into each friand, then
sprinkle tops with quinoa crumble mixture.3 Bake for 20 minutes or until a skewer
inserted at centres comes out clean.
Cool in tray for 5 minutes, then transfer
to a wire rack to cool.
