2 teaspoons vegetable or peanut oil,
plus 1 tablespoon extra
3 eggs, lightly whisked
2 cloves garlic, crushed
350g turkey breast, sliced
3 bacon rashers, rind removed, chopped
1 carrot, finely chopped
50g snow peas, thinly sliced
4 green onions, sliced, plus extra,
to serve
¼ cup sweet chilli sauce, plus extra,
to serve
2 tablespoons soy sauce, plus extra,
to serve
1 cup cold cooked long-grain rice
1 cup shelled peas, blanched
½ cup frozen corn kernels, thawed
Coriander sprigs, to serve

1 Heat a wok or large frying pan over high
heat. Add oil; swirl to coat surface. Add
egg; tilt to cover base. Cook for 1 minute
or until set underneath. Turn; cook for
a further minute. Remove from wok; roll
up omelette and slice.

2 Add extra oil to wok. Stir-fry garlic for
1 minute or until fragrant. Add turkey
and bacon; stir-fry for 3 minutes or until
browned and turkey is cooked. Add
carrot, snow peas and onion; stir-fry for
2 minutes or until carrot is tender.

3 Add the sauces, rice, peas and corn;
stir-fry for 1 minute or until heated.
Serve topped with omelette, extra
onion, coriander and extra sauces.
