Berry Tiramisu
Sundaes
SERVES 2 PREP 10 minutes + cooling
COOK 5 minutes COST $3.15 a serve
100g frozen mixed berries
2 tablespoons icing sugar mixture
80g extra-light cream cheese
80g low-fat fresh ricotta
3 teaspoons skim milk
½ teaspoon vanilla essence
3 sponge finger biscuits (savoiardi),
roughly chopped

1 Place 2 tablespoons of mixed berries into
a bowl; reserve. Place remaining berries in
a small saucepan with half the icing sugar;
cook and stir for 2 minutes or until icing
sugar dissolves. Cool.

2 Using an electric mixer, beat cream
cheese, ricotta, milk, essence and remaining
icing sugar in a bowl until creamy.

3 Layer berry syrup, sponge finger biscuits
and ricotta cream in 2 x 1½-cup serving
glasses. Serve topped with reserved berries. Coffee & Raisin
Sundaes
SERVES 2 PREP 5 minutes + 15 minutes
to soak + 15 minutes to freeze
COST $2.95 a serve

½ cup raisins
1 tablespoon coffee-flavoured liqueur
250g soy vanilla ice-cream,
slightly softened
2 dairy-free waffle baskets
½ cup drained canned sliced peaches

1 Combine raisins and liqueur in a
bowl; stand for 15 minutes to soak.

2 Place ice-cream in a bowl. Add half
of the raisin mixture; stir to combine.
Freeze for 15 minutes or until firm.

3 Place scoops of ice-cream into each
waffle basket. Serve topped with peach
slices and remaining raisin mixture.

Tropical Pine
Lime Sundaes
SERVES 2 PREP 10 minutes
⅓ cup cream
1 teaspoon pure icing sugar
¼ teaspoon coconut essence
¼ rockmelon, cut into 2 wedges
1 cup pine lime gluten-free ice-cream
1 tablespoon dried pineapple pieces

1 Using an electric mixer, beat cream,
icing sugar and essence in a bowl until
soft peaks form.

2 Place rockmelon wedges in serving
bowls. Serve topped with ice-cream,
whipped cream mixture and pineapple.
