Tortillas with
whipped feta
& balsamic
strawberries

INGREDIENTS


¼ cup vegetable oil
2 tortillas
200 g Danish feta
cup cream
Salt and black pepper
cup balsamic vinegar
1 cup strawberries, sliced

METHOD



  1. Heat oil in a pan and fry the
    tortillas until crisp and golden.
    Drain on paper towel.

  2. Blend together feta, cream,
    salt and pepper until smooth.

  3. Bring balsamic vinegar to a
    simmer, then turn off the heat
    and add the strawberries.
    Leave to cool.

  4. To serve, dollop whipped
    feta on to the tortillas
    and spoon over the
    balsamic strawberries.

make your berries last longer
There is nothing worse than your gorgeous, plump, bright red strawberries going vrot
and heading into the bin! Keep them fresh for longer with this trick: Fill a bowl with ¼ cup
vinegar and 1½ cups water. Soak the berries in this for about 5 minutes, then rinse with
water and place on paper towel to dry. Store in a container with a lid in the fridge.
