PICNIC!


Roll out the blanket
and feast with
friends on a lavish
raceday spread

Mixed mini
frittatas

aMAKES 12 • PREP
20 MINS • COOK 30 MINS


  • 5 chat potatoes

  • 6 eggs

  • 450ml thickened cream

  • 1 tablespoon snipped chives

  • 150g smoked trout, flaked

  • 2 tablespoons caramelised
    onion (see tip)

  • 50g feta, crumbled

Preheat oven to moderate,
180°C. Line a muffin pan
with paper patty cases or line
it with baking paper.

Place potatoes in small
saucepan and cover with
cold water. Bring to the boil
and cook for 6-8 minutes,
until tender. Allow to cool
and slice thinly.

In a jug, whisk eggs,
cream and chives
together. Season to taste.

COOKING

Divide trout and
potato among 6 cases.
Fill remaining cases with
onion and feta. Pour egg
mixture evenly between
the recesses.

Bake for 15-20
minutes, until firm and
golden. Allow to cool in
pan for 5 minutes before
transferring to a wire rack
to cool. Transport in an
airtight container.

Buy pre-made jars of
caramelised onion from
the supermarket or deli, or
make your own by slowly
sautéing sliced onion and
adding a little balsamic
vinegar and brown
sugar.
