Turkey Salad with Orange and
Poppy Seed Dressing
SERVINGS 4 (2 cups salad + 2 Tbsp.
dressing + tortilla strips from^1 ⁄ 2 of a
tortilla each)
PREP 30 minutes BAKE 8 minutes
CHILL 2 to 24 hours
2 6-inch corn tortillas
2 cups frozen whole kernel corn
1 tsp. olive oil
6 cups chopped romaine letuce
2 cups chopped cooked turkey
breast
1 cup chopped seeded tomatoes


(^1) ⁄ 2 cup chopped orange sweet pepper
(^1) ⁄ 3 cup red onion slivers
2 slices lower-sodium, less-fat
bacon, crisp-cooked and chopped
1 recipe Orange and Poppy Seed
Dressing



  1. Preheat oven to 350°F. Cut tortillas
    into^1 ⁄ 4 -inch strips. Spread strips in a
    single layer on a baking sheet. Bake
    8 to 10 minutes or until crisp. Cool
    completely. Divide strips among four
    small resealable plastic bags.

  2. In a large skillet cook corn in olive oil
    over medium heat 6 to 8 minutes or until
    lightly browned. Remove from heat. Cool
    completely.

  3. In four salad containers layer the
    next six ingredients (through bacon) and
    the corn. Cover and chill 2 to 24 hours.
    Divide Orange and Poppy Seed Dressing
    among four small containers. Cover and
    chill 2 to 24 hours.

  4. To serve, shake dressing. Drizzle one
    dressing portion over one salad portion.
    Cover and shake or toss with a fork. Top
    with one portion tortilla strips.


ORANGE AND POPPY SEED DRESSING In a
small bowl whisk together^1 ⁄ 4 cup
orange juice, 1 tablespoon olive oil,
1 tablespoon lime juice, 1 tablespoon
honey, and 1 teaspoon poppy seeds.
