lub 39 offers its members more than simply services, it inspires
a lifestyle focused on health and beauty; a unique concept
born out of the vision of Scottish ex-Rugby International
and Monaco resident Ross Beattie. His elite professional
sportsman history forms the backbone of 39. Ross’ philosophy for 39
was to create an ideal environment for its members to practice fitness
and to nourish their bodies in a way that achieves optimum results
and improves quality of life. Attention to detail runs throughout the
club in order to achieve this balance. Each space of the club, from the
interior design as a whole, to the high tech fitness equipment on the
sports floor, the art curated to both please and providing a thought-
provoking experience for the viewer, the delicious and healthy menu
at 39 Dining, and the world class services at the Studio, is meticulously
designed for the supreme comfort of its’ members.
At the helm of 39 Dining is top chef David Knapp, “I decided to
become a chef when I was 12 years old. My mom took me to one of
those bad buffet restaurants and there was a big guy that walked out of
the kitchen, telling people what to do. I liked that! Also, the fact that my
grandfather was a butcher and fisherman has definitely had an influence
on me.” Originally from New Zealand, Knapp made his way to the UK,
having worked for Gordon Ramsey and Gary Rhodes before relocating
to Monaco.
The menu, David’s own creation, is specialised for one to eat healthy,
recuperate the body after a workout and, of course, to enjoy every bite.
“We only use clean methods of cooking, such as baking and sous vide,
a process in which the food cooks in its own juices thereby reducing
the need for salt. We cook without the use of any butters or fats,” says
Knapp. To season the dishes, vinaigrettes or fruit-based sources are used,
again that do not include any fats. The fish and meat that is served at the
restaurant all come from local sources, without any added preservatives
and additives. Oftentimes foods are dehydrated to compact and extract
the true flavours of the product. The menu does not rely on animal
proteins as the sole source of protein. Instead, the chef includes other
excellent sources such as vegetables and grains. This health-centric
approach is accompanied by the personal trainers’ approach to nutrition,
with each client receiving a full nutritional plan side by side with their
fitness program.

Life is, of course, a balancing act and green smoothies, although
delicious, must be weighed out with a proper full English breakfast. The
meal is served with two eggs, baked beans, English bacon, sausage, black
pudding, mushrooms and toast - a timeless dish not to be missed!
The story of the classic Thirty Nine Salad began as a need for members
that wanted something light, filling and, of course, delicious, to nourish
them after a workout and that would help their bodies recuperate. There
are several sources of protein in this salad, including one that is animal-
based, although the member may of course choose to forgo this ingredient
and enjoy a vegan version. Currently, the members’ favourite dishes are
the açaí bowl, the salmon and tuna dishes and the Thirty Nine Salad; the
components of which are changed up every day. Along these dishes are
with the specials, which feature everything from 100% bio beef fillets to
New Zealand mussels and burratina with heirloom tomatoes and basil.
It would seem that constantly providing fresh dishes that are both
nutritious and taste incredible is a challenge, but it is a challenge that
Chef David Knapp happily welcomes. With the wide array of fresh
produce available from local sources throughout France and beyond, the
creation of new dishes comes naturally. Several essential ingredients for
the chef are smoked paprika and barbecues, apparent with the recent
introduction of the 39 Spice Mix, a delicious seasoning for meat made
fresh – the elements of which are of course Knapp’s secret!
The club is open every Monday - Friday from 7:00 am to 11:00 pm
and Saturday - Sunday from 8:00 am to 11:00 pm. Membership fees start
from €4,900 for annual individual membership and €7,900 for couples.
Perspective members under 27 years of age can enjoy a discounted annual
fee of €2,700. The club also offers an annual individual and couple social
membership for the fees of €1,200 and €1,900 respectively, for those
who wish to enjoy the social areas of the club including the members-
only lounge, the Blue Room, 39 Dining and Studio 39 at discounted rates
for services. Lastly, there is an option to become a member for 30 days,
at the rate of €2,500.
All areas of Thirty-Nine Monte Carlo are reserved to members and their
friends except for the beauty salon, Studio 39. We welcome perspective
members to book an appointment and enjoy a guided tour around the
facilities, from Monday to Friday.
