Low-fat pecan brownies

YOU WILL NEED
» 3 medium free-range
eggs, separated
» 225g golden caster sugar
» 200g low-fat yogurt
» 1½tbsp vegetable oil
» 175g self-raising flour
» 75g cocoa powder, plus
extra for dusting
» 100g roasted, salted pecans,
roughly chopped
» Icing sugar, to dust
WHAT TO DO

Preheat oven to 190°C, Gas 5.
Brush a 30 x 20cm brownie tin
with oil and dust with cocoa.

In a bowl, mix together egg
yolks, sugar, yogurt and
oil. Sift in the flour and
cocoa powder, add the pecans
and fold in gently to combine.

Whisk egg whites. Add
1tbsp to the chocolate
mix and stir, then
fold in rest of egg whites.

Pour into brownie
tin and bake for
20-25 mins. Cool
for 5 mins in tin, then
turn out on to a wire rack
to cool. Cut into 24 and
dust with icing sugar.
