In a bowl or large
measuring cup cover
1 lb. (about 2½ cups)
pitted fresh dates
(any variety) with
1 cup boiling water.
Let dates soak 3 to
8 hours. Blend dates
and their soaking
liquid in a food
processor until
smooth, adding more
liquid if necessary
to achieve a thick,
spreadable
consistency. Makes
3 cups.

Date paste can be
stored for up to
1 month in the fridge
or up to 6 months in
the freezer.

FREEZER TIP:


Scoop date paste in
1-oz. (2-Tbsp.) dollops
onto a parchment-
lined baking sheet
and freeze until solid.
Store dollops in a
resealable plastic
bag. The small
portions thaw quickly
and make it easy to
take out just what you
need for a recipe.
