Stir together 2 cups diced tomatoes, ½ cup
chopped white onion, ½ cup chopped fresh
cilantro, 2 Tbsp. chopped jalapeño chile, and
1 Tbsp. lime juice.

Combine 1 cup chopped
fresh or thawed frozen
mango, 1 cup chopped
cucumber, 2 Tbsp.
chopped jalapeño chile,
¼ cup chopped red or
white onion, 2 Tbsp.
chopped fresh cilantro,
and 1 Tbsp. lime juice.
PINEAPPLE &
SWEET PEPPER
Stir together 1½ cups finely chopped
pineapple, ½ cup finely chopped red
bell pepper, ½ cup finely chopped
white or yellow onion, ¼ cup chopped
fresh cilantro, 1 Tbsp. lime juice, and
hot sauce to taste.
