holiday drink to a downright
cultural, end-of-year staple.
While some major chains
have yet to debut a vegan-
friendly version of the
beverage (we’re waiting
for Starbucks to import its
vegan pumpkin sauce from
the UK to the States), there
are still several ways to get
your PSL fix right now.
The Coffee Bean & Tea Leaf:
Go for the classic Pumpkin
Latte with soy, almond, or
coconut milk. For an iced
version, order the Pumpkin
Cold Brew Almond Milk Latte
with vanilla syrup instead of
powder.
Peet’s Coffee: Not only can
you order a classic vegan
PSL here, you can also try a
Pumpkin Chai Latte or Dark
Chocolate Pumpkin Mocha,
sans milk or honey. Order with
soy or almond milk, and don’t
forget to grab a vegan pastry
while you’re at it.
Whole Foods Market: If your
local Whole Foods coffee bar
offers a PSL for the holidays,
simply opt for a vegan milk (no
upcharge!) and start sipping.

The vegetables are nearly finished roasting,
the dinner rolls are perfectly golden, the mac and
cheese is bubbly and beautiful, and your guests are
arriving in 15 minutes. Then it dawns on you ... you
forgot to make the gravy! Don’t panic. This aromatic,
10-minute recipe will ensure your mashed potatoes,
stuffing, and roasts get the saucy love they deserve.
Quick
Rosemary
Gravy
Makes 1 cup
1 tablespoon all-purpose
flour
(^1) / 4 teaspoon chopped
fresh rosemary
1 tablespoon vegan butter
1 cup vegetable broth,
warmed
2 teaspoons soy sauce
1 / 8 teaspoon granulated
garlic
1 / 8 teaspoon granulated
onion
(^1) / 8 teaspoon black pepper
- In a small skillet over
medium heat, add flour and
rosemary. Stir continuously
for 3 minutes, until flour
is slightly toasted and
rosemary is aromatic. Add
butter and cook, stirring
continuously for 2 minutes.
- Stir in broth, soy sauce,
garlic, onion, and pepper.
Once mixture comes to
a simmer, reduce heat to
low, and cook for 5 more
minutes, or until thick
enough to coat the back
of a spoon. Keep warm
until ready to use or reheat
before serving.
