Step 4c.
Cut squares with the 2” cutter.


Step 4d.
Cut black fondant squares the same size.
If there are remnants of cornstarch on
the black fondant, brush with the black
airbrush paint.


Step 4e.
Cut white fondant squares with the cutter.


Step 4f.
Find the centre of the cake. Apply water
to the back of the squares. Place a square
in the bottom centre and work your way
around alternating squares as shown.


Caramel Apple


Step 5a.
Roll a 1” ball and a thin log of red gum
paste. Brush water around the base of
the ball and attach the log. Put water on
the end of a skewer and insert into the
centre of the ball. Allow to dry.


Step 5b.
Add tan and dark cream fondant together
for a caramel colour. Cut a 3" circle with a
0.5" centre hole.


Step 5c.
Apply water to the red apple and drape
the caramel on like a skirt. Smooth the
fondant until secured. Tuck under the
apple and cut away excess.


Step 5d.
Spray with glaze spray.


Step 5e.
Finely chop a cashew and attach with
piping gel to the bottom of the apple.


Step 5f.
Create a small cream bow with gum paste
and attach to the skewer with candy melts.


Cable Knit


Step 6a.
Add a small amount of brown fondant to
orange fondant to create a burnt orange
colour. Apply shortening or water to the
cake tier and cover with the fondant.


Step 6b.
Spray the knit mould with cooking spray
or dust with cornstarch. Roll out a piece
of fondant as big and deep as the mould.


Step 6c.
Press the fondant into the mould with
your fingers. Use the smoother to press
the fondant evenly and remove excess.
