about 20 secsuntilthechocolateis
glossyandliquid,butnohigherthan
32C.Thechocolateis nowtempered.
Pourthemeltedchocolateontothe

1.5mmthickness.Allowsettothe

1 Bringthebutterandcreamtoa
boil,removefromtheheat.Blitzthe
chocolateandflavouringin a food
processor,andaddingthecream
mixturea littleata time,blitzuntil
youhavea smoothganache.Set
asidefor 30 minsuntilfirm.
2 Scoopteaspoonfulsofganache
androllbetweenyourpalms,either
roll in chosen coating and place in

thefridgetosetfora fewhours,
overnight,orif youprefertruffles
witha hardshell,placethenaked
trufflesin thefridgetofirmup.
3 Forhardshelltruffles:temperthe
