1 medium(120g)zucchini
70gsugarsnappeas,trimmed
¼medium (50g) red capsicum, sliced
finely
1 longred chilli, de-seeded and sliced
finely
80gasparagus,trimmed and sliced
lengthways
¼cupmixedmicrocress or fresh chives
corianderleaves
70gfirmtofu,cutinto1cm cubes
GINGERDRESSING
1 ½tablespoonssoysauce
1 ½tablespoonssesameoil
2 teaspoonsredwinevinegar
1 tablespoonbrownsugar
1 tablespoonfinelygratedfreshginger
1 tablespoonfinelychoppedlemongrass
¼cup(25g)finelychoppedcashews

1 Bringa mediumsaucepanofwater
totheboil.Cooknoodlesuntilal dente.
2 Meanwhile,usinga vegetablepeeler,
slicethezucchiniintolongribbons.
Placein a bowlwiththeremaining
ingredients;tosstocombine.
3 Drainnoodles;transfertoa bowl.
4 DRESSINGCombineallingredientsin
a screw-topjar;shaketodissolvesugar.
5 Topnoodleswiththevegetablesand
tofu;spoonoverhalfthedressing.

1 x 200gsirloinsteak
1 teaspoonextra-virginoliveoil
½teaspoonfinelychoppedrosemary
1 tablespoonextra-virginoliveoil
1 teaspoonredwinevinegar
2 tablespoonschoppedcurlyparsley
80gbuttonmushrooms,slicedfinely
100gbroccolini,stemshalvedlengthways

1 Trimsteakandslicelengthwaysinto
3 thinslices.Transfertoa bowl;add
theteaspoonofoilandtherosemary.
Seasonwithfreshlygroundblack
pepper and toss to coat.

a highheatandcooktheslicedbeef
fora minuteoneachside.Transferto
a warmplateandcoverwithfoil.Add
thebroccolinitothegrillplateandcook,
turningoccasionally,untilthebroccolini
is emeraldgreenandlightlycharred.
4 Addbroccolinitotherestingmeat
andspoonoverthemushrooms.

3 eggs
2 tablespoonsfinelygratedparmesan
1 tablespoonextra-virginoliveoil
3 (30g)springonions,slicedfinely
40gbabyspinachleaves
¼ cup continental parsley leaves

2 tablespoonsfinelychoppeddill
½bunchchives,slicedfinely
10 cherrybocconcini
100gmedleygrapetomatoes,halved
1 tablespoonextravirginoliveoil

1 Whiskeggsin a medium-sizedbowl;
seasonwithseasaltandfreshlyground
blackpepper.Addparmesanand 2
tablespoonsofwater;stirtocombine.
2 Heattheoilin a small(18cm)frying
panovera mediumheat.Addspring
onionsandcookfora minuteoruntil
golden;addthespinachleavesand
cookfora furtherminuteoruntiljust
wilted.Addhalftheherbsandpour
overtheeggmixture.Arrangethe
bocconciniontop,coverwitha
saucepanlid,reduceheattolowand
cookfor 10 minutesoruntiljustcooked
through.Fora goldentop,cookfora
fewextraminutesundera hotgrill.
3 Meanwhile,combinethetomatoes
andoilin a bowlandseason.
