PREP
Place the sous vide device in
a large pot of water (set on a
trivet) and set the temperature
(we used 130°F for medium-
rare). Put steak and flavorings
in a resealable plastic bag
(Ziplocs work; we love
reusable Stasher bags too)
and remove the air.

COOK
Submerge bag in the water,
adding 30 minutes for every
1⁄2 inch of thickness. When
done, sear the steak to lock in
its juiciness and add flavor.
