125gbutter,chopped
¼ cupicingsugar,plus
1 tablespoonextra
1 ¼ cupsplainflour
3 eggs
1 cupcastersugar
2 teaspoonsfinely
gratedlemonrind
½ cuplemonjuice

1.Preheatovento
180°C.Greasea shallow
20cmsquarecakepan.
Linebaseandsides
withbakingpaper,
extendingpaper2cm
overthesides.
2.Beatbutterandicing
sugarina smallbowl
withanelectricmixer
untilsmooth.Stirin
1 cup of the flour until

combined.Pressmixture
evenlyoverbaseofpan.
Bakefor 15 minutes.
Removefromovenand
levelthebaseinpan
usinga spatula.Return
tooven,thenbakefor
a further 10 minutes or
untillightlybrowned.
3.Placeeggs,caster
sugar,remainingflour,
rindandjuiceina
mediumbowl, whisking
untilcombined.Pour
lemonfillingoverthe
hotbase.
4.Bakeslicefor 20
minutes oruntilfirm.
Coolinpan.Justbefore
serving,dustwithextra
sifted icing sugar.

2.Combinesiftedflour,

over base of pan. Bake

for 15 minutes oruntil
lightgolden.Remove
fromovenandcool.
3.Placecondensedmilk,
syrupandextrabutter
ina mediumsaucepan.
Stiroverlowheatuntil
smooth.Pourmixture
overcooledbase.Bake
for 20 minutes oruntil
goldenbrown.Cool.
4.Placechocolate
andoilina medium
heatproofbowlover
a mediumsaucepan
ofsimmeringwater
(makesurethebase
ofthebowldoesn’t
touchthewater). Stir
untilsmooth.Spread
chocolatemixtureover
cooledslice.Refrigerate
for 30 minutesoruntil
chocolateis set,then
cutinto 24 pieces with
a hot knife.
