Tannins are polyphenols released from grape skins, seeds and stems when
they soak in grape juice after pressing. Primarily a term used in red winemaking,
tannins can also be found in white wines, especially when there’s been skin
contact. On the other hand, tannins can also be derived from oak barrels.
A number of factors come into play with how the tannic effect is experienced
but, generally speaking, you can determine whether a wine is high or low in
tannins depending on how dry your mouth feels when drinking it. In all cases,
though, tannins are integral to structure and to a wine’s development as it ages.
