OPEN-FACE ROASTED


BEET, RICOTTA
AND GOAT CHEESE
SANDWICH


MAKES 4 SERVINGS
HANDS-ON TIME 10 MINUTES
TOTAL TIME 50 MINUTES


2 yellow beets
⅓ cup ricotta cheese
⅓ cup creamy goat cheese
1 tbsp lemon juice
1 tbsp each chopped fresh
dill and basil


4 slices brown or black bread
1 cup sunflower microgreens

Preheat oven to 400°F. Wrap beets in foil;
bake on baking sheet until tender, about 40
minutes. Let cool, peel and slice.

In bowl, mix together ricotta, goat cheese,
lemon juice, dill and basil. Spread each piece
of bread with cheese mixture, then top with
beets and microgreens.
PER SERVING about 170 cal, 7 g pro, 10 g total fat (4 g sat. fat),
21 g carb (3 g dietary fibre), 15 mg chol, 340 mg sodium.
