¼cuplemonjuice
¼cupoliveoil
3 Tbspcrèmefraîche
1 clovegarlic, minced
Seasalt
¾packedcupherbs(weusedanequalmixof
basil,mintandparsley), roughly chopped, plus
extratogarnish
6-12slicessourdoughbread, toasted
6-12eggs,poached
150gfeta
Grated lemon zest, to serve
1 Putthepeasina largeheatproofjug,
coverwithboilingwaterandleavefor
3 minutes. Drain well and return to jug.

2 apples,cored,diced
½cupflakedalmonds
½cupraisins
½tspcinnamon
2 cupsquick oats
3 eggs
1 litreliquid(eitherallmilkor50:50milk
andwater)
2 tspvanillabeanpasteorvanilla extract
Creamoryoghurt,toserve
Edible flowers (optional), to serve
1 Ina heavy-bottomedfryingpanover
mediumheat,meltbutterandfryapple
untilbeginningtocolour.Addtheflaked
almondsandfryuntiltheystarttoturn
goldenthenaddtheraisinsandfryfora
further1 minute.Turnoffheat,stir in
thecinnamonandsetaside.
2 Putoatsina heavy-bottomedpan,add
theeggsandmixwell.Slowlypourinthe
liquid,mixingasyougo.Turnonheat
andbringtotheboilthenreducethe
heatandsimmerfor 10 minutesorso.
Ifyourporridgeistoothickatthis point,
adda littlehotwatertothin.
3 Stirinvanillathendivideporridge
between 6 bowls, top with the apple
mixtureandservewithcreamor
yoghurt.Decoratewith a few edible
flowers if desired.

overnightin750mlwater.Inthemorning,whisk
intheeggsandatleast250mlmilk/water.Cook
foratleast5 minutesoruntil it reaches your
desired consistency.
2 Addthelemonjuice,oliveoil,crème
fraîcheandgarlicandseasonwellwith
seasaltandfreshlygroundblackpepper.
3 Usinga stickblender,brieflyblend
halfthepeamixture,leavingthe other
halfasit is.Stirintheherbs.
4 To serve,topeachsourdoughtoast
withpeamixture,followedbyanegg.
Crumbleoverthefetaandsprinklewith
lemon zest and extra chopped herbs.
