pepperina largebowl.Usinga sharpknife,
separatethechickenwingsatthejoint.
Tossthechickeninthemixture,coverand
chillfor 30 minutes. 2 Tomakethesweet
chillisauce,placetheginger,brownsugar,
caster sugar, soya sauce and vinegar in a

smallsaucepan.Bringtotheboilandcook
for 15 minutes,oruntilthickened.Addthe
chilliesandcookfora further5 minutes,
thencool. 3 Heattheoilto180°C.Mixthe
flour,cornflourandbakingpowder,then
mixintheeggwhiteandwater. 4 Dipthe
chickenintothebatterinbatchesand
deep-fryuntilgoldenandcookedthrough.
Tossinthechillisauce and serve.
