Serves 6
Handful of foraged wild garlic leaves,
finely chopped
1 clove of garlic, finely chopped
Zest of 1 lemon
Pinch of sea salt flakes
1 Add all the ingredient to a bowl
and mix until well combined.
Note: If wild garlic is difficult to find,
you can use flat-leaf parsley instead.
Wild garlic gremolata

fresh wild garlic in local woodland
or on riverbanks

1.3kg new potatoes, halved if large
4 spring onions, dark green tops and
roots removed, finely sliced
Small handful of fresh herbs of your
choice, finely chopped (eg mint and
flat-leaf parsley)
4 tbsp olive oil
1 tbsp wholegrain mustard
2 tbsp red wine vinegar
1 Steam the potatoes until tender.
Meanwhile, in a bowl, mix together
the spring onion, herbs, oil, mustard
and vinegar to make a dressing.
2 Add the dressing to the cooked
potatoes, season with salt and
pepper and toss to combine.
3 Serve warm or at room temperature.
This can be made in advance and
refrigerated, removing a couple
of hours before serving.
