Serves 6
½ head of savoy cabbage shredded
(or kale, or cavolo nero),
1 tsp caraway seeds, toasted
6 juniper berries, crushed
4 tbsp raw cider vinegar
2 tbsp maple syrup
pinch of salt

1 Place all the ingredients in a
bowl and toss together, scrunching
the cabbage in your hands a little.
Transfer to a serving bowl and serve
immediately or, if making in advance,
keep in the fridge and remove
an hour or so before serving.

Quick pickled
cabbage with caraway
and juniper

Prepare in advance for a stronger
f lavour, or throw together in
minutes before serving
