  1. Discard the ends of the eggplant. Peel wide strip of the eggplant skin leaving some of it
    on. Slice them into 1/4 inch slices.

  2. Get a small mixing bowl: whisk in it the spices with eggs.

  3. Place a large skillet over medium heat. Heat 1 inch of oil in it. Dip the eggplant slices in
    the eggs mix then cook them until they become golden brown on each side.

  4. Drain the fried eggplant slices and place them on some paper towels to drain the excess
    oil. Serve them with your favorite dip.

  5. Enjoy.
