Vegetable fritters
Prep: 10 minutes
Cook: 5-10 minutes
Makes: 8 fritters
Directions
1 Put the corn into a food processor. Whiz until
finely chopped. Spoon into a bowl. Add the
remaining ingredients and season. Whisk
together thoroughly.
2 Heat a little oil in a frying pan. Add large
tablespoons of the mixture into the pan. Fry for a
few minutes, then flip over and fry for 2-3 minutes
until lightly golden and cooked through.
Prep: 5 minutes
Makes: 1 serving, plus leftovers
Directions
1 To make the houmous, measure all the
ingredients into a food processor. Blitz
until you have a smooth consistency.
Season to taste (for babies 12 months+).
2 Assemble your lion using lots of
colourful vegetables and crackers, and
serve alongside the houmous dip.
