8 slices thick-cut bacon
3 tbsp maple syrup
½ tsp coarsely ground black pepper
¼ cup mayonnaise
2 medium tomatoes, thinly sliced
4 leaves cos lettuce, halved
8 Ultimate Classic Waffles (page 23)
or frozen waffles, reheated


  1. Preheat oven to 220°C. Arrange
    a wire rack in a large rimmed baking
    tray lined with foil.

  2. Arrange bacon in a single layer on
    rack. Brush generously with syrup;
    sprinkle with pepper. Roast for 22
    to 28 minutes or until browned and
    crisp.

  3. Spread mayonnaise on one
    side of waffles. Top half of waffles
    with bacon, tomatoes and lettuce.
    Top with remaining waffles. Serve
    immediately.
    EACH SERVING About 2 740kJ,
    17g protein, 32g fat (6g saturated),
    72g carbohydrate, 2g fibre, 1 285mg
    sodium.
