Preparation Time 15 minutes Total Time

1½ cups cake flour
1½ tsp baking powder
½ tsp ground cinnamon
½ tsp salt
1 cup full-cream milk
⅓ cup sugar
2 large eggs, beaten
4 tbsp butter, melted
1 tsp vanilla extract


  1. Preheat waffle maker.

  2. In a large bowl, whisk flour, baking
    powder, cinnamon and salt. In a
    medium bowl, whisk milk, sugar, eggs,
    butter and vanilla. Add milk mixture to
    flour mixture. Stir until just combined.
    (Small lumps are okay.)

  3. Spray waffle maker with nonstick
    cooking spray and add just under
    ⅓ cup batter to centre. Close waffle
    maker; cook for 2 to 3 minutes or
    until deep golden brown. Toss with
    Cinnamon Sugar (below) or dip into
    Chocolate Glaze (below), and sprinkle
    with coconut or chopped nuts if you
    like. Let stand at room temperature
    to set, for at least 1 hour.


CINNAMON SUGAR In a brown paper
bag, shake together ⅓ cup sugar and
1 tsp ground cinnamon.

CHOCOLATE GLAZE Place 120g milk-
chocolate chips in a medium bowl.
In a small pot, heat ⅓ cup double
cream until hot but not boiling; pour
over chocolate chips. Let it stand for
5 minutes. Stir until smooth. Whisk in
2 tbsp liquid glucose (CAB Foods
stocks it) and 2 tsp vanilla extract.
Use immediately.
