fetacheese 200 g
freshthymeorwildrocketa fewsprigs,
togarnish

1 Preheattheovento160°C.Place1 T
butter,theseasoningandgarlicin a
widepan.Addtheshallots,cut-side
down. 2 Slowlyfrytheonionsuntil
softenedandpalegoldenin colour.
Removefromthepanandsetaside.
3 Placethesugarin a saucepanand
cookovera lowheatuntila caramel
forms.Addthebalsamicvinegarand
remainingbutter.Poura thinlayerof
caramel,2–3mmthick,intoa shallow

saucepanorovenproofpiedish.Place
theshallotsontopofthecaramel,cut-
sidedown. 4 Rolloutthepuffpastry
toa thicknessof3–5mmandcutout
a discslightlylargerthanthepanorpie
dish.Crumblethefetaovertheshallots.
Placethepastryovertheshallotsand
tuckin theedgessothepastryforms
a “cup”toholdin theshallots.Makea
smallairholein thecentreofthepastry
andbakefor 30 minutes,oruntilgolden.
Turnoutandservegarnishedwith
thymeorwildrocket.
