1 Tomakethecucumber,mixit with
thesalt,vinegarandlimejuice.Leaveto
marinatefor1 hourorevenovernight.
2 Mixthebeef,peppercorns,oiland
oystersauce.Heata largepanandstir-
frythemeatinbatchesuntilcookedto
yourliking. 3 Servethebeefwiththe
cucumber,toasted sesame seeds and
jasminerice.

1 Placethelemonjuiceandsugarina
saucepanandbringtotheboil.Reduce
theheatandsimmerfor5 minutes.Whisk
inthebutterandsaltuntilmelted.Allow
tocoolfor5 minutes.Returntotheheat.
2 Whiskintheeggyolksoneata time.
Cookovera gentleheatuntilthickened.
3 Heata medium-sizedpanandsprinkle
ina littlesugar.It willcaramelisequickly.
Adda pancakeandheatthroughon
theoneside.Fillwitha dollopofcurd
andfoldoverorfoldinallsidestoform
a square.Repeat with the remaining
pancakes.
