Countdown to the Party Timeline


2 dayS befOre:
Make a list and do the grocery shopping.
Take out all platters, serving utensils, glasses, silverware, cocktail items, and plates that will
be needed for the party as well as any decorations or centerpieces that you will need, such
as candleholders, vases, linens, etc.
Make the Honey Dijon Roasted Chickpeas and store in an airtight container.
Make the cocktail sauce for the Shrimp Cocktail and refrigerate.
Make the Sun-Dried Tomato Crackers and store in an airtight container.
Write the messages that will go inside the Good Fortune Cookies.

1 day befOre:
Prepare the Parmesan and Almond Stuffed Dates and store in the refrigerator in an
airtight container.
Make the Good Fortune Cookies and store in an airtight container.
Make the cornbread for the Cornbread Bites. Wrap tightly in plastic until ready to use.
Prepare the Warm Ricotta Dip, but do not bake. Wrap and refrigerate until ready to heat.

The day Of:
Set the tables, bar area, and/or buffet and decorate as desired.
Poach the shrimp for the Shrimp Cocktail.
Make the Avocado Mousse for the Shrimp Cocktail.
Measure out and combine the ingredients for the Nutella Fondue, and set aside until ready to heat.
Prepare a platter with all ingredients that will be dipped into the fondue.
Cut strips of orange zest for the Manhattan cocktails.
Take out and arrange all the liquors and ingredients needed for the cocktails.
Sauté the andouille sausage and cut the cornbread for the Cornbread Bites.

1 hOur befOre:
Arrange the Cornbread Bites with the cooked sausage on top on a sheet tray. Place in a 375 ̊F
(190 ̊C, or gas mark 5) oven until warm, about 5–7 minutes.
Warm the ricotta dip in the oven.
Bring the stuffed dates to room temperature.
Place the shrimp on a platter with the cocktail sauce and Avocado Mousse.
Place the roasted chickpeas in a bowl.
Make the fondue using ingredients that have already been prepped.
Bring out the fortune cookies.

Cornbread Bites


with Andouille Sausage


•Soy-free

andouille is a smoked spicy sausage popular in Cajun cooking and is perfectly
matched with my buttery cornbread. use cooked hot Italian or chorizo sausage
if you can’t find andouille.

fOr COrnbread:
1 cup (140 g) masa harina
1 cup (140 g) medium-grind
cornmeal
¼ cup (32 g) cornstarch
¼ cup (50 g) sugar
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons salt
½ cup (112 g) unsalted butter,
melted
1½ cups (355 ml) milk
2 large eggs
1 cup (130 g) fresh or
frozen corn kernels (optional)

fOr TOppInG:
4 andouille sausages
¼ cup (60 g) sour cream
