Good Fortune Cookies
•Soy-free
better than takeout, these fortune cookies are extra special because you can fill them with
custom fortunes containing well wishes for your friends and family for the new year.
3 tablespoons (21 g) flaxseed meal
3 tablespoons (45 ml) boiling water
3 egg whites
¾ cup (150 g) sugar
¾ cup (90 g) liv’s flour blend
(page 15) or 6 tablespoons (48 g)
cornstarch plus 3 tablespoons (24 g)
almond flour plus 3 tablespoons
(24 g) oat flour
1½ teaspoons vanilla extract
1 tablespoon (15 ml) heavy cream
4 tablespoons (56 g) unsalted
butter, melted
⅛ teaspoon salt
Preheat the oven to 350 ̊F (180 ̊C, or gas mark 4). Generously grease 2
heavy cookie sheets. Cut out twenty-four 2½ x ½-inch (6.4 x 1.3 cm) pieces
of paper and write fortunes on them.
In a small bowl, combine the flaxseed meal and boiling water. Let sit for
5 minutes so that the flax absorbs the water and forms a gel.
In a large bowl, beat the egg whites and sugar with a whisk until
combined. Whisk in the flour blend, vanilla, heavy cream, melted butter,
and salt. The consistency should resemble a crepe batter. Spoon the batter
by tablespoonfuls onto the prepared baking sheet, 3 per sheet. Place one
sheet in the oven to bake. In 3 minutes, place the other baking sheet in the
oven.
Bake each tray for 6 to 8 minutes, or until the edges of the cookies
begin to brown slightly and the centers look set. Use a small offset spatula
to quickly lift one cookie at a time onto a clean, flat surface. Place a
message in the center, and fold in half to cover the message. Fold the ends
together the opposite way to form a fortune cookie shape. If they won’t
stay closed, place them under a drinking glass or coffee mug to hold the
shape while they cool and set. When you’ve finished forming the first 3
cookies, the second sheet of cookies should be ready to come out of the
oven and be shaped. Repeat the process until you have 24 fortune cookies.
Yield: 24 cookies
Chef’s Tips
- Dip the tips of the cookies in melted chocolate and dip in sprinkles to
make these extra festive! - If the cookies break in the center when you fold them, they probably
haven’t baked long enough. Make sure to bake until the edges are golden
and the centers are set.
