gas3½.Putthecupcakeingredientsina

2 Spoonthebatterintothepapercases.
Bake for 20-25 minutes until risen, golden

anda skewerpushedintothecentre
comesoutclean.Leavetocoolinthe tin
ona wirerack(seeMakeAhead).
3 Meanwhile,makethebuttercream.Beat
thebutterina largebowlusinganelectric
mixerorwoodenspoon.Addhalftheicing
sugarandbeatuntilcombined,thenadd
theremainingsugarwiththevanilla. Beat
untilsmoothandpalerincolour.
4 Usea smallknifetocutouta circleof
cakefromthetopofeachcupcake,
creatinga shallowindent.Cutthecake
circleinhalftomakethebutterflywings.
5 Filla pipingbagwiththeicing(cutoffthe
tipif it’sa disposablebag)– noneedfor
a nozzle.Pipesomeicingintothesmall
holesinthecakes,thengentlypushthe
cakewingsintoit.Siftovericingsugarand
enjoystraightaway,orputina sealable
