Mix500gturkeymince,1 choppedredonion,1 crushed
garlicclove,gratedzest1 lemon,½choppedredchilli,
1 largefree-rangeegg,beaten,40gfreshbreadcrumbs
andsaltandpepper. Shapeinto4 burgers.Heatthegrill
tohigh,thenheataglugofoliveoilina largefryingpan.
Frytheburgersfor5 minutes,flipandcookfor3 minutes
more,thentopwitha125gmozzarellaball,sliced. Fry
for2-3minutesmore,thentransfertothegrillfor3-4
minutesuntiltheburgersarecookedthroughandthe
cheeseisgolden.Heata griddlepanovera highheat.

oliveoil, thengriddlefor3 minutesoneachsideuntil
charredandtender.Transfertoa bowlwiththereserved

ciabattarollswitholiveoilandtoastinthepan.Spread

Harissa-spiced meatballs with
houmous and pomegranate seeds
SERVES 4. HANDS-ON TIME 30 MIN

In a bowl, mix 500g turkey mince, 1 tbsp harissa paste,
2 chopped banana shallots, 1 crushed garlic clove,
40g fresh breadcrumbs and 1 medium free-range egg with
salt and pepper. Shape into 16 meatballs. Heat a glug of oil
in a large non-stick frying pan, then fry the meatballs for
about 10 minutes, turning occasionally, until browned and
cooked through. Meanwhile, put 200g couscous in a
heatproofbowl.Pourover200mlboilingwater. Coverand
setasidefor5 minutes,thenfluffupwitha fork.Spoonthe
couscousontoa platter,topwiththemeatballs,then
drizzlewith100ghoumous,mixedwithwaterasneeded.
Sprinklewith40gtoastedpinenuts,a handfuloffresh
softherbsand100gpomegranateseeds, if youlike.
