IT IS NO SURPRISEthat siblings Ellie and
SamStuddworkwithcheese.Bornto
‘MasterofCheese’WillStudd,their
childhoodholidayswerespentvisiting
artisan farmhouse producers in Europe,
snackingoneverykindofcheese,andat
times having to explain to their friends
whytheirdadwasalsoknownasthe
‘Roquefort Rebel’. The family joke is that
theirveinsrunwithbrie,notblood.
Overthepastdecade,thepairhave
developed their love of fromage; both
have travelled the world, working with
celebrated cheesemongers and learning
to make and mature cheese. Both are
members of the esteemed International
Guilde Des Fromagersand, these days,
hand select artisan cheeses alongside
Willforthe‘SelectedbyWillStudd’range,
workingtirelesslytosharethesecheeses
withtheUSandAustralianmarkets.

BOOZY BRILLAT-SAVARIN
SERVES 6-8
Begin this recipe 1 day ahead.

(^1) / 4 cup (40g) each sultanas and raisins
2 each dried apricots and peaches,
chopped
(^1) / 2 cup (125ml) dark spiced rum
1 x 200g Brillat-Savarin cheese (we used
WillStudd), in its box
1 baguette
Combinedriedfruitandspicedrumin
abowl.Coverwithplasticwrapandset
asideatroomtemperatureovernight.
Preheat oven to 200°C. Drain the fruit,
reservingsomerum.Wrapthebottomof
theboxverytightlyinfoilandtopthe
cheese with the soaked fruit and a splash
ofrum.Placeonabakingtrayandbake
for 15 minutes or until edges are soft and
warm but centre is still firm. Transfer to
a serving plate and serve with baguette.

damp napkin until ready to serve.
