1 garlicclove,finelychopped
70 mlextra-virginoliveoil
8 thickslicesryesourdough
8 slices(70gm)jamónIbérico
1 bunch rocket, leaves picked

1 Usingtheheelofyourhand,squash
cherriesona boardtoreleasethepit.
Combinecherries,vinegar,sugar,thyme
andpepperwith½tspsaltflakesin
a bowlandsetasidetomacerate.
2 Processfeta,lemonjuiceandgarlic
ina smallfoodprocessoruntilsmooth.
Withmotorrunning,add50mloilin
a thin,steadystreamandprocessuntil
emulsified;seasontotasteandsetaside.
3 Meanwhile,preheata char-grillpan
overhighheat.Brushbreadwith
remainingoil,thengrill,turningonce,
untilgolden(1-2minuteseachside).
Spreadwithwhippedfeta,thentopwith
jamón, cherries and rocket to serve.
