2 tbspoliveoil

Pastae fagioliis a classicItalianpeasant-styledish,andthe
combinationofa soupybrothofpastaandbeans,orchickpeas
suchasincicerie triafoundinPuglia(seep42),is verysatisfying.
Thisis a fastversionusing cannedcannellinibeans.

300 gmdriedditali
2 tbspoliveoil
1 smallonion,diced
80 gmpancetta,
cutintolardons
1 tbsprosemary,
coarselychopped
2 garliccloves,finelychopped
500 ml(2cups)chickenstock
400 gmcannedbabyRoma
tomatoesorcherrytomatoes
400 gmcannedcannellini
beans,drained
Extra-virginoliveoil,
fordrizzling
Finelygratedparmesan
(optional),tornbasilleaves
and bread, to serve

1 Cookspaghettiin a large
saucepanofboilingsaltedwater
untilal dente(8-10minutes).
Drain,reservingpastawater.
2 Meanwhile,heatoilina
saucepanovermediumheat.
Addgarlicandstiruntilfragrant
(10-20seconds).Addrosemary
andanchovy, stirfor1 minute,
thenaddolivesandcapers, and
stiruntilfragrantandcombined
(20seconds).Addpassata,
bringtoa simmer, thensimmer
tobringflavours together
(1 minute).Addspaghettiand
tosstocombine,loosening
thesaucewitha littlepasta
waterif needed. Serve topped
withparmesan.

saucepanofboiling
saltedwateruntilaldente
(8-10minutes).Drainwell.
2 Meanwhile,heatoliveoilin
a saucepanovermedium-high
heat.Addonionandstiruntil
softened(5minutes),thenadd
pancettaandstiruntilstarting
tocrisp(5minutes).Add
rosemaryandgarlicandstir
untilfragrantandrosemary
is crisp(2minutes).Addstock
andtomatoes, bringtothe
boilandseasontotaste,then
stirthroughbeansandditali.
3 Ladleintobowls, drizzle
withextra-virginoliveoiland
topwithparmesanandbasil.
Seasonwithpeppertotaste
and serve with bread.
