gelatineleaves,softened
for5 minutesincoldwater
SPONGE
60 gmeggwhites(about4)
45 gmcastersugar
45 gmeggyolks(about3)
30 gmplainflour,sifted twice
2 tsplemonjuice
3 tspoliveoil
Pureicingsugar, for dusting
LEMONCURD
1 egg
1 eggyolk
70 gmcastersugar
60 ml(¼cup)Meyerlemon
juice(seenote)
45 gmcoldunsaltedbutter,
cutintocubes


1 Forpannacotta,lightlyspray
six9cm-wideramekinswithoil
andlinewithplasticwrap.Heat
goat’smilk,cream,sugarand
vanillain a smallsaucepan
overmediumheatuntilsugar
completelydissolves(2minutes).
Removefromheat.Squeeze
excesswaterfromgelatine
andaddtopan.Stirtodissolve,
thenpourmixtureintoramekins
andrefrigeratetoset(atleast
4 hoursorovernight).
2 Forsponge,preheatovento
190°Candlinea 25cmx 30cm
slicetinwithbakingpaper.
Whiskeggwhitesandsugarin
anelectricmixeruntilfirmpeaks
form. Add yolks and whisk until


lightandfluffy.Foldthrough
flourusinga metalspoon,then,
workingquickly,foldthrough
remainingingredientsanda
pinchofsalt.Spreadsponge
mixtureontotray,tapgently
toevenout,thenbakeuntil
lightgolden(6-8minutes).
Coolbriefly,theninvertonto
a sheetofbakingpaperand
usethepapertohelproll
spongeintoa log,startingat
a longedge.Setasidein
paperatroomtemperature.
3 Forlemoncurd,bringa
quarter-fullsaucepanofwater
toa simmerovermediumheat.
Placeegg,yolkandsugarin a
largeheatproofbowlandwhisk
oversimmeringwateruntilit
reaches50°C(1 minute).Whisk
in lemonjuiceandcontinue
whiskinguntilit reaches80°C
(2 minutes). Reduce heat to low

andwhiskin butter,in 3 batches,
untillightandfluffy,andbutter
is completelyincorporated
(1-2minutes).Removefromheat
andrefrigeratetoset(1 hour).
4 Bringsugar,vanillaand100ml
watertotheboilin a small
saucepan,stirringtodissolve
sugar.Removefromheat,
pouroverblackberriesand
refrigeratetocool.
5 Unrollspongeontoa clean
teatoweldustedwithicing
sugar.Spreadcurdover,leaving
a 5cmborderalongthefaredge.
Usethetoweltohelpreroll
thesponge,thenrefrigerate,
wrapped,toset(10minutes).
6 Beforeserving,gently
removepannacottafrom
mouldsbyinvertingontoplates.
Removeplasticwrap.Slice
spongerouladeinto6 pieces,
dustwithicingsugarandplace
a sliceoneachplate.Serve
withberries,drizzledwiththeir
syrupandgarnishedwithmint.
NoteMeyerlemonsare
availablefromselect
greengrocers;if unavailable,
substitute40mllemonjuice
and20mlmandarinjuice.
